Step 1
Start oven at 400 F
Step 2
Slice spring 1 onions and 2 cloves garlic, then sauté in 1 tbsp olive oil for 1 min on medium heat. Sprinkle in a pinch of chili flakes.
Step 3
Scramble in 4 eggs and two handfuls of spinach (as much as you want). Over medium heat stir and let eggs cook while spinach wilts. This may take around 3-5 minutes. Wait until very end to add salt and pepper to taste.
Step 4
I got thin crust round cut pizza dough, pre made from the store. If you can get that, get pizza dough to about 1/4 inch thick and large enough to fold over your filling. I put half the filling on one side of the pizza dough, then folded over the other half. I used a fork to press and seal the edges. You can either do this step on the greased or flour’d pan you’ll bake the pizza on, or you can use a large spatula to transfer the calzone after you filled it.
Step 5
Add a touch of olive oil and salt to the top of the calzone. Put in oven and cook for about 12-15 minutes, until crust and light brown and crunchy. Transfer to plate to cool.
Step 6
For sauce, combine 4 tbsp sour cream with 2 tbsp sriracha and 2 tbsp lime juice. Stir and add a splash of water if you want a slightly lighter sauce.
Step 7
Dip or drizzle sauce on calzone and enjoy!
