Breakfast for dinner is on my list of favourite things in life. Breakfast for dinner flatbreads is a fun way to get the unwilling onboard. Somehow the pizza look makes everything delicious. The best thing about this meal is that you can customize it with ingredients that are best enjoyed around your table. This is one rare instance where I use a prepared sauce/spread - jarred pestos are made relatively simply with a short list of ingredients and I don’t mind the time and cost savings.
Add a tossed salad to up the veggie intake for the day

Instructions
Step 1
Preheat oven to 350F
Step 2
Saute sausage, bacon or diced vegetables.
Step 3
Arrange flatbreads on baking sheets.
Step 4
Spread a thin layer of pesto on each flatbread
Step 5
Top each with cheese, cooked sausage, bacon or sauteed vegetables and baby kale.
Step 6
Crack one or two eggs on to the middle of each flatbread and bake for 7-10 minutes or until eggs are cooked to your liking
Step 7
Remove from the oven and season with salt & pepper.
