Mindful Rocky Road

These are delicious! And a great nutrient rich snack or dessert.
You will need:
Silicone muffin cases, or paper muffin cases in a muffin tray, or a small rectangular or other dessert mould (greased with coconut oil), or a small loaf or brownie tin.
Made with cacao powder which is rich in minerals: magnesium, iron, potassium and calcium, cacao is also a rich source of protein and anti-oxidant plant nutrients.
Add almonds or peanuts for even more protein!
Some ideas for rocks: Pistachios (nice colour), almonds, hazelnuts or peanuts. Edible rose petals. coconut shavings. goji berries, wholegrain rice puffs, pumpkin, flax or other seeds, cacao nibs, freeze dried raspberries or sultanas.
Keep these stored in an airtight container in the fridge - will keep for around 3 weeks.

Instructions
Step 1
Weigh out the butter & powder & mix up your rocks: Almonds, berries, etc in a bowl.
Step 2
Pop the nut butter & a generous teaspoon of coconut oi in a small pan over a low heat & melt down gently. You want it to be fairly loose, thick liquid. Turn it right down or off while you make up the chocolate.
Step 3
Place a squeaky-clean glass bowl over a saucepan of water. Make sure that the water doesn’t make contact with the bowl.
Pop on a medium heat & bring the water almost to bubbling. When you see the bubbles begin to rise, turn the temperature
down or off.
Step 4
Add the cacao butter to the bowl & allow it to melt, moving it around gently.
Step 5
Once melted, add the sweetener. Whisk it in well. Add your extract at this point too. Don’t allow the water to boil!
Step 6
Once the sweetener & butter are well combined, tip in the cacao powder whisking it in to avoid lumps. You are going to need to be quick & sure!
Step 7
Place some of the rocky mix in the bottom of your mould so its evenly distributed & throw the rest into the Chocolate mix. Combine & spoon into your choice of moulds. Keep in the fridge for around 5 hours to harden off.
Step 8
Cut the rocky road into 4cms cubes or chunks ready to enjoy as snacks or desserts. Keep in an airtight container in the fridge.
