Step 1
Fill a large pot with 2 inches of water. Add the cauliflower stem side down & steam for 5 minutes.
Step 2
Remove from heat, pat dry & place in an 8-inch square baking dish.
Step 3
In a small mixing bowl whisk together 2 tablespoons olive oil, garlic, paprika, salt & pepper. Brush mixture over the cauliflower, ensuring every surface is covered.
Step 4
Roast at 400(f) degrees for 20 to 25 minutes, until golden & fork tender in the center.
Step 5
As the cauliflower roast, add the remaining olive oil, bread crumbs & walnuts to a skillet over low. Cook until toasted, about 3 to 4 minutes.
Step 6
Remove from heat & stir in the parsley.
Step 7
When ready to serve, transfer cauliflower to a serving dish & top with bread crumb mixture.
