Ingredients
10 servings
1 x 15 ozcan pumpkin
NOT pumpkin pie filling
2 cupsflour
2 cupssugar
2 tspbaking powder
1 tspbaking soda
½ tspsalt
1 tspcinnamon
1 tspnutmeg
1 tspground clove
4eggs
1 cupoil
canola or vegetable
1 cupapplesauce
you can substitute 1 egg and 1/2 cup of oil with 1 cup of applesauce, but don't add unless you are substituting
Instructions
Step 1
Preheat oven to 350 degrees. Mix all dry ingredients together in medium bowl. Whip eggs, then add oil and pumpkin in large bowl. Add dry ingredients and mix (either by hand with a spatula or hand mixer) until well blended. Using spatula, pour into ungreased 9 x 12 glass baking pan and bake for 25 minutes. Test for doneness in middle with sharp knife. Should be spongy but not gooey. If not ready, bake for 5 minutes then check again. Repeat if necessary. Let cool in pan, then cut into squares. Refrigerate leftovers.
