Instructions
For the base
Step 1
Grind up the cookies using a few turbo hits of 2-3 seconds each, until all is left is powder
Step 2
Add the butter and cook for 3:30' / speed 3 / 80º. If some clumps remain after this, program 4-5” / speed 6 to undo them
Step 3
Spread the mix on the base of your mold, pressing it a little bit to make it firm and even. Store the mold in the fridge.
For the filling
Step 4
Hydrate the gelatin sheets in cold water for 2-3 minutes
Step 5
Pour 100g whipping cream, the hydrated gelatine sheets and the sugar in the empty bowl (no need to clean it), and program 4' / speed 1 / 80º
Step 6
Add the rest of the whipping cream and the cheese in the bowl and mix for 15" / speed 5 / 0º
Step 7
Take out the mold from the fridge and pour the filling on top of the cookie and butter base and store it back in the fridge until the filling sets (3-4 hours)
For the covering
Step 8
Just spread jam over the filling
