Classic Greek side dish/condiment/dip. Serve warm, cold or room temp. We always had it cold. Of you’re thinking mash potato, you’re in the ball park. Now add a ton of garlic and lemon.

Instructions

Step 1
Peel, dice, rinse then boil potatoes until soft. About 15-20 minutes. Put 1-2 Tbsp of oil, all the peeled garlic, juice of a half lemon and a pinch of salt into a food processor and rip it until smooth. Strain potatoes and rinse once more. Combine potatoes and garlic mixture into a large bowl. I use a hand masher to get things going. Slowly add olive oil a little at a time to potatoes and hand mix. Add a little more oil and continue to mix. Mix in the lemon juice. Try to get these things smooth by hand. Use a power beater if you prefer. Salt to taste. Transfer to serving dish. Garnish with green onion, parsley and lemon zest. Drizzle some more olive oil over the top and serve. Heads up. This is where a really nice olive oil can make a HUGE difference.
