Instructions

Step 1
In stand mixer, beat butter for one minute

Add sugar and beat another minute
Step 3
Add egg and extracts
Step 4
Sift together flour, cocoa powder, baking powder and salt.
Step 5
Add to butter mixture and mix till combined
Step 6
Roll dough to 1/4 inch thickness between two pieces of parchment paper and transfer to large baking sheet and chill one hour.
Step 7
When ready to bake, preheat oven to 350, and line two or three baking sheets with parchment paper and using 1 1/2 inch cutter, cut out 36 circles. You may need to reroll and cut out excess to get rest of cookies.

Bake 7 to 9 minutes until they lose their shine, but are still soft.
Step 9
Cool completely before dipping in chocolate.
Step 10
To make chocolate for dipping, melt chocolate at 30 second intervals till melted.
Step 11
Stir in peppermint extract and dip cookies in. Using a fork, tap lightly on side of bowl to remove excess. Place on parchment paper. Let sit at room temperature or in refrigerator till set. You can drizzle ant excess chocolate on top.
