Ingredients
4 servings

3 cupscabbage
very thinly sliced

½ cupscallions
thinly sliced, divided

¼ cupcarrot
grated

¼ cupcanola mayonnaise

2Fresno chili
seeded and sliced

2 tablespoonsapple cider vinegar

¾ teaspoonsgranulated sugar

¾ teaspoonsblack pepper
divided

½ teaspoonkosher salt
divided

3 tablespoonsdark brown sugar

1 tablespoonbourbon

1 tablespoonlow sodium soy sauce

4 x 6 ozskin on salmon fillets
Instructions
Step 1
1. Preheat charcoal grill to medium high, 400 to 450 degrees

Step 2
2. Place cabbage, 1/4 cup scallions, carrot, Mayo, chili, vinegar, sugar, 1/4 teaspoon black pepper and 1/4 teaspoon salt in a bowl. Stir well to combine and chill until ready to serve

3. Whisk together brown sugar, bourbon, soy sauce and remaining 1/2 teaspoon black pepper. Pour into a shallow dish. Place salmon, flesh side down into the sauce and chill for 15 minutes
Step 4
4. Remove salmon from dish. Place marinate in a saucepan and boil for two minutes
Step 5
5. Place salmon, skin side down on oiled grates and grill, covered to desired degree of doneness, 10-15 minutes for medium brushing occasionally with the reserved marinade
Step 6
6. Place on a platter and top with the remaining 1/4 cup scallions and sprinkle with the remaining 1/4 teaspoon salt. Serve with slaw
