Instructions

Step 1
Start with your cheese sauce. Melt butter. Add diced onions until golden brown. Add garlic until fragrant. Add flour and whisk frequently until combined. Slowly add heavy cream. Add grated cheese and stir frequently until melted. Add seasonings. Leave on low heat until ready to use.
Step 2
Slice potatoes using mandoline to ⅛-inch thickness.
Step 3
Lightly grease baking dish. Add ½ of sliced potatoes to bottom. Pour ½ of your cheese sauce over potatoes.
Step 4
Layer the other ½ of your potatoes into the dish. Add the remainder of your cheese sauce, using a spatula to help spread it evenly.
Step 5
Bake uncovered at 400° for 1 - 1½ hours. There will be a good amount of grease on top due to the cheese. We used spoons to help remove some of the grease.
