Cheesy Meat-free Pepperoni Pizza Loaded Fries With Garlic & Herb Dip

Make pizza night spud-tacular! You'll bake fries with melty mozzarella, tomato sauce and vegetarian pepperoni slices until they're golden and crisp, before serving with corn salad and garlic and herb mayo.

Instructions

Step 1
Preheat the oven to 220°C/ 200°C (fan)/ gas 7 Cut the potatoes (skins on) into thin chips

Add the chips to a large baking tray (or two!) with a drizzle of vegetable oil and a generous pinch of salt and give everything a good mix up
Step 3
Put the tray[s] in the oven for 25-30 min or until the chips are golden and starting to crisp

Add the sweetcorn cobettes to a large piece of tin foil and top with a knob of butter
Step 5
Scrunch the foil around the corn until tightly sealed and add to another baking tray
Step 6
Put the tray in the oven for 20-25 min or until the corn is tender
Step 7
Meanwhile, peel and finely chop (or grate) the garlic
Step 8
Add the tomato paste to a bowl with half of the chopped garlic (save the rest for later!) and a generous pinch of salt, pepper and sugar
Step 9
Add 3 tbsp [6 tbsp] cold water and give everything a good mix up – this is your tomato sauce
Step 10
Drain the mozzarella, then pat and squeeze as much liquid out as you can with kitchen paper
Step 11
Tear the drained mozzarella into rough, bite-sized pieces

Grate the cheddar cheese

Add the mayo to a small bowl with the remaining chopped garlic, half of the dried oregano (you'll use the rest later!), a pinch of salt and 1 tbsp [2 tbsp] cold water – this is your garlic & herb dip

Once the chips are golden, push them into 2 [4] piles on the baking tray[s]
Step 15
Drizzle over the tomato sauce, then top with the remaining dried oregano, torn mozzarella, grated cheese and pepperoni slices

Return the tray[s] to the oven for 6-8 min or until the cheese has melted and the pepperoni is crispy
Step 17
Once done, set aside for a few min to cool slightly – these are your cheesy pepperoni pizza loaded fries

Meanwhile, wash and tear the gem lettuce into rough pieces
Step 19
Once the corn is tender, stand them upright and slice the corn from the cobs using a sharp knife (be very careful!), then discard the cobs
Step 20
Add the torn lettuce and sliced corn to a large bowl and toss it all together – this is your corn salad
Step 21
Tear the basil leaves over the cheesy pepperoni pizza loaded fries and serve the corn salad to the side

Drizzle half of the garlic & herb dip over the salad and use the rest for dipping
