Instructions

Step 1
Preheat your air fryer to 190°C for 3 minutes.
Step 2
Wash and dry the potatoes and rub them with olive oil and sprinkle with salt.
Step 3
Air fry the whole potatoes at 190°C for 30-35 minutes, flipping halfway through, or until they’re soft when pierced with a fork. (depending on the size of your potato you may need to cook them for a little longer).
Step 4
Once the potatoes are cooked, let them cool for a few minutes. Then, carefully cut them in half lengthwise and scoop out most of the flesh.
Step 5
Brush the potato skins with a little more olive oil and season with salt and pepper.
Step 6
Mix the potato filling with the shredded ham and grated cheddar and season. Fill the skins with the ham, and grated cheddar cheese.
Step 7
Spray with a little oil and air fry for an additional 3-5 minutes, until the cheese is melted and bubbly.
Step 8
Serve with a scatter of crispy onions and some sour cream to dip your skins in.
