Preheat the oven to 180°C (355°F), 160°C fan (320°F), gas mark 4 and line a baking tray with greaseproof paper.

Peel the potatoes. Cut each potato into slices which are around 5mm (¼ in) thick. Place the fries onto the lined baking tray, spray with cooking spray and pop in the oven for 20 minutes until tuning golden. (You could also cook your fries in an air fryer for around 16 minutes.

Meanwhile, into a bowl add the passata, garlic granules, onion granules, oregano, basil, and granulated sweetener, and season with salt and pepper to taste. Mix well.

Once the fries are beginning to turn golden, transfer to the baking dish (or dishes, if making individual portions.) Pour over most of the tomato sauce, keeping some aside for dipping, sprinkling over the mozzarella and add the slices of pepper and mushrooms.

Put back in the oven for 15 minutes until the cheese has melted and is turning golden. Put the remaining tomato sauce in a small bowl for dipping. The pizza-loaded fries can also be frozen once cooled – defrost fully before reheating.
