Instructions
Step 1
Preheat oven to 425. Place tomatoes and zucchini in a large baking dish and season with pepper. Drizzle with olive oil and roast for about 20 minutes or until vegetables are tender.
Step 2
Remove from oven and stir in garlic, olives and basil. Place cod filets on top of vegetables, and sprinkle with salt and pepper. Drizzle with lemon juice.
Step 3
Return to oven, and bake for about 15 minutes until fish is cooked through.
