Step 1
Select Sear/Sauté and set to Medium High. Select Start/Stop to begin. Allow the pot to preheat for 5 minutes.
Step 2
Put the oil and onion in the preheated pot and cook for 5 minutes, stirring occasionally. Add the garlic and cook until fragrant, about 1 minute more.
Step 3
Add the chicken to the pot and season with the salt and pepper. Cook for 5 minutes to brown the chicken.
Step 4
Add the chicken broth, soy sauce, and rice to the pot. Assemble the Pressure Lid, making sure the pressure release valve is in the Seal position. Select Pressure and set to High. Set the time to 3 minutes, then select Start/Stop to begin.
Step 5
When pressure cooking is complete, quick release the pressure by moving the pressure release valve to the Vent position. Carefully remove the lid when the pressure has finished releasing.
Step 6
Select Sear/Sauté and set to Medium High. Select Start/Stop to begin. Add the frozen vegetables to the pot. Cook for 5 minutes, stirring occasionally. Serve.
