Crust
Peanut Butter Layer
8 ozcream cheese
½ cupsugar free peanut butter
½ tspvanilla extract
1 ¼ cupspowdered swerve
½ cupheavy cream
4 tspsour cream
1 tbpeanut butter powder
1 tbgelatin
½ cupwater
warm
Chocolate Layer
Instructions
Step 1
Make crust first. Melt butter, allow to cool and stir in vanilla extract. Sift dry ingredients together, blend well with a whisk. Then pour the liquids into the dry ingredients and mix thoroughly. Press into the bottom of the cheesecake pan and refrigerate while making the peanut butter layer.
Peanut Butter Layer
Step 2
Microwave cream cheese and peanut butter until soft. Beat until homogenous.
Step 3
Beat in vanilla, then swerve (sifted), then heavy cream. Mix completely after each addition, mix and additional minute after adding heavy cream.
Step 4
Add in salt and sour cream, mix well. Sift in peanut butter powder and mix well. Stir in water, then beat with mixer.
Step 5
Sprinkle in gelatin in single layer to avoid clumps and mix continuously for 5 minutes after adding the last of the gelatin.
