Beginner Sourdough Starter Recipe

This is my easy recipe for making sourdough starter from scratch. In 7 days, you’ll have a bubbly, active starter ready to make you delicious loaves of breads, bagels, focaccia, pancakes, and so much more! The only tools you need are a baking scale, container with a lid, a wood spoon or spatula, and flour. **I recommend using a whole wheat flour because it will help activate your starter quicker.**

Instructions

Step 1
DAY ONE: Add 40g water, 40g flour to your mason jar. The texture should resemble thick pancake batter or yogurt. Now loosely cover and place in a dark warm place for 24 hours.
Step 2
DAY TWO: The next day, check to see if your starter has any air pockets, bubbles on the surface, or even liquid on top. If you don’t notice anything yet, leave your starter for another 24 hours and follow these directions tomorrow. However, if you notice any activity, let’s begin our first feeding. ***If you did see liquid on top, this is called hooch, it’s just alcohol that forms during fermentation. Try your best to take scrape it out with a spoon.***
Step 3
DAY TWO - SIX: Now discard your starter, leaving about a tablespoon in the jar. Feed it equal parts flour and water (or 40g water and 40g flour). Do this every 24 hours for the next 7 days. Each time discard and leave a tablespoon to refeed. Keep the lid loosely covered and be sure to keep your starter in a warm dark place.
Step 4
DAY SEVEN: On day 7, your starter should be doubling in size after each feeding. The texture will be spongy, fluffy, and similar to roasted marshmallows (think: s’mores). And it should also smell really good. Once you notice these signs, your starter is active and ready to use!
