The icing for this recipe tastes EXCELLENT (it is one of my favorite cream-cheese icing recipes), but it does not make very much. I typically will double the icing recipe.
Additionally, this recipe is best baked in a stoneware jelly-roll pan, but any sort of baking dish will do.

16 ozPumpkin Canned Puree

2 cupsall-purpose flour

½ tspsalt

2 tspbaking powder

1 tspbaking soda

2 tspcinnamon

1 tspallspice

1 cupoil

4eggs

Instructions
Step 1
Pre-heat oven to 350 degrees
Step 2
Combine all dry ingredients in a medium bowl.
Step 3
Combine all wet ingredients in a large bowl.
Step 4
Stir in combined dry ingredients to wet.
Step 5
Spread evenly in baking pan.
Step 6
Bake for 20-25 minutes. Let cool before applying frosting.
