I have never made luchshen (noodle) kugel (pudding for Yom Kippur or any other occasion that I want a dairy kugel for. This recipe is that good. It is more custardy than most luchshen kugel recipes. Try it, you’ll like it!!!

Ingredients
10 servings
KUGEL:

1 lbbroad egg noodles
cooked as per package to al dente

2eggs
large

1 tspvanilla extract

2apples
washed, peeled and sliced

1 cupraisins
I use golden raisins

1 heaping tspcinnamon

¼ cupgranulated sugar

0.25 lbbutter
or margarine
TOPPING:
Instructions
KUGEL:
Step 1
Preheat oven to 350 degrees F.
Step 2
Drain cooked noodles. Put into a very large mixing bowl.

Step 3
Beat 2 large eggs in small bowl.

Step 4
Mix the drained cooked noodles, 2 beaten large eggs, vanilla extract, and granulated sugar together in very large bowl.
Step 5
Add 1 heaping tsp cinnamon, the washed, peeled and sliced apples, and 1 cup of raisins to the bowl and gently combine.
Step 6
Pour the mixture into an ungreased 9x13 or 8 x 16 glass pan.

TOPPING:
Step 7
Mix cottage cheese, sour cream, lemon juice, milk, and 2 large eggs together in a blender.

Step 8
Pour mixture evenly on top of the noodle mixture in the glass pan.
Step 9
Bake at 350 degrees F for 1 hour.
Step 10
Cut into squares. Serve hot. Can be served as a side dish with a dairy meal which is how I serve it, or as a dessert.
