Step 1
Combine olive oil and garlic in a lg deep saucepan and cook over med-low heat about 10 min until garlic is deeply colored.
Step 2
Pour tomatoes in a bowl. Crush by hand, removing stems.
Step 3
When garlic is almost done, add red pepper flakes. Add tomatoes and salt. Simmer 4 hrs to reduce. Stir occasionally and skim the top.
