Step 1
Preheat smoker to 200°F
Step 2
Remove membrane from ribs and pat dry with paper towels
Step 3
Generously coat both sides with Sweet and Smoky rub. Let sit for a few minutes to ensure seasoning sticks.
Step 4
Place ribs bone side down in smoker and cook for 3 1\2 hours spritzing with apple cider every 30 minutes to retain moisture. During this time, combine the butter, brown sugar and apple cider in a blender and mix as well as possible (set aside, covered)
Step 5
After 3 1\2 hours, remove ribs and turn smoker temp to 225°F
Step 6
Measure large sheet of heavy duty foil and place ribs bone up in the middle. Pour butter/brown sugar mixture all over the bone side and seal the foil to ensure no leaks (use 2 sheets if necessary). Return ribs bone side up to smoker and cook 2 1\2 more hours.
Step 7
After 2 1\2 hours in the foil, remove ribs and carefully drain the liquid. Place ribs on a tray and generously brush both sides with the bbq sauce. Make sure it is thick. Return ribs to smoker for 1 1\2 hours or until your preferred doneness.
