This is actually to my surprise the recipe on the Libby's can of pumpkin. But let's give Nin credit for finding it. The filling can be cooked in buttered ramekins for those that don't care for pie crust.

Instructions

Step 1
Combine ingredients in order given. Beat together with electric mixer or whisk.
Step 2
Pour the mix into pie crust. May need to cover the pie crust edges with aluminum foil to prevent burning.
Step 3
Bake at 425 degrees for 15 minutes. Then, lower temperature to 350 degrees and bake for an additional 45 minutes or until a knife inserted into center comes out clean. Remove the foil for last 15 minutes of baking.
