Instructions

Step 1
Microwave sweet potatoes according to package. -you can also use fresh sweet potatoes. They will jusy need to be cubed and cooked ahead of time. I prefer to cook fresh sweet potatoes quickly in an instapot.
Step 2
Cook beef, garlic, southwest seasoning, salt, and pepper, in hot oil, over medium-high heat for 8-10 minutes or until meat is cooked through. Add potatoes back to skillet.
Step 3
Sprinkle with cheese. Cover and cook until cheese melts.
Step 4
Garnish with avocado, cilantro and tomatoes
