Smoked Tomato Cream Sauce

You will need 6 small pieces of wood, a baking rack, a pan, and a perforated pan that will fit inside your pan. This is so you can get that delicious smoked flavor if you do not own a smoker.

Instructions

Step 1
Grab your 6 pieces of wood and place them onto the baking rack. Then transfer it all onto a gas stove or somewhere you can safely light them on fire.

Once lit, rotate them every so often and let them get a nice charcoal outside.

While wood is toasting, quarter your tomatoes.

Now dice your onion, mince up your garlic, and chop up your basil leaves.

Once your wood has a nice charcoal color and is beginning to crack in some places turn off the heat and let them naturally go out. Once they do, add fresh thyme and rosemary until they begin to darken.

Once they are fragrant, add the coals along with the fresh herbs into a pan. Then add a perforated pan on top (this is where your tomatoes will go).

Add tomato and cover with foil. Afterwards, place the pan on top of the stove and cool over medium heat for 60 min. (Go longer if you want a more smoky flavor).

Once the tomatoes finish roasting, add 1.5 tbsp olive oil to a saucepan over medium high heat. Add garlic, onions, and salt until fragrant.

Add in smoked tomato’s until warmed and beginning to burst on their own. Followed by freshly chopped basil.

Deglaze with wine

Once the wine is reduced by half, add in heavy cream. Soon after, add in a few cracks of pepper and let simmer for 10 min.

Once finished, purée until smooth. Now you have a lovely smoked tomato cream sauce. Enjoy!!
