Ingredients

400gHaricot bean
tin, rinsed & drained
200gcourgettes
wash & diced
50gwhite onion
peeled & diced
2gginger powder
15gfresh garlic
peeled & grated
saffron
eight strands, alternatively 5 g of turmeric powder can be used
15gtomato purée
1tomato
washed & diced
5gcurry powder
500mlvegetable stock
made with 1 vegetable stock cube
80gcarrot
peeled & diced
5gsalt
10mloil
Instructions
Step 1
In a medium frying pan, heat 10 ml oil over a medium-high heat, then fry the onions and garlic for 5-10 mins or until the onions become translucent. Add the stock, ginger, saffron, carrots, curry powder, tomato puree, tomato and beans then mix well. Then simmer for 30 minutes on a medium heat..
Step 2
Add the courgettes and simmer for a further10 minutes.
Step 3
Serve the stew in medium bowls with rice, pasta or couscous.
