Heat 1 tablespoon of the oil in a medium non-stick frying pan over medium-high heat. Add the sweet potato and cook, stirring occasionally, for 5 minutes or until softened. Transfer to a large bowl.

Preheat the pie maker. Fill the pie maker holes with sweet potato mixture. Close and cook for 8 minutes or until set. Repeat with the remaining mixture. Serve warm or cold.
