Breakfast Calzones

I love Trader Joe's pizza dough, so of course, I had to find a way to include it in my breakfasts! A bit more effort to make a calzone than a pizza, but I think it's worth it for the hot, cheesy inside.

Instructions

Step 1
Take the pizza dough out and let it sit for 30 minutes.
Step 2
In the meantime, dice your onion, mushrooms, and tomato. Take the avocado and mash it in a bowl, seasoned with EBTB.

Preheat the oven to 500ºF
Step 4
Split the pizza dough into 6 even-sized pieces and roll them out into ovals (mine were nowhere near perfect, so just as circular as you can).
Step 5
In a large, oiled pan over medium-high heat. Add your onions and let them sautee for around 5 minutes. Once translucent, add mushrooms and tomatoes. Cook for another 3 minutes. Then add in the spinach and salt. Crack in 5 eggs and add a splash of milk. Cook until they are no longer runny, but still wet. They will continue cooking in the oven.
Step 6
Add the eggs and avocado smash across the middle of each calzone. Sprinkle cheese on top. Then fold the calzone over, roll the edges in, and then use a fork to secure the pocket. Check out our video since that might be easier to understand.
Step 7
Take the calzones and put them on a baking sheet covered with parchment paper.
Step 8
Make your egg wash by cracking an egg with 1 tbsp water. Brush the egg wash over the top of each calzone so that they will brown nicely in the oven.
Step 9
Bake for 10 minutes, or until golden.
Step 10
Serve with taco sauce and/or sour cream!
