This is a perfect recipe to switch up when you make it. This is where i dump leftover veggie dishes or even stir fry for a fusion type flavor. I hate that word. For Mac and cheese that is EXTRA BUSSIN add Asian flavors.

Please read the whole recipe first. Preheat oven to 350 and add water to a pasta pot and set on high

For the love of garlic just read the whole recipe. If you’d like bacon, fry the bacon here and use bacon grease to sweat onion and garlic. Heat olive oil on medium then sauté onion and garlic until fragrant and translucent, remove mixture from pan and strain oil back into to separate flavored oil from mixture and remove chunks. Keep mixture to reintroduce later.

It’s your funeral. If something goes wrong, blame your inability to follow instructions. Or you may succeed anyway. If so, how dare you. Add butter to pan, and melt. Don’t forget to salt your pasta water! Once water boils add pasta, for rotini cook 7-9 minutes or until just before al dente. Drain and set to the side, lightly toss with olive oil or cooking spray to keep from sticking. I’ll even toss it in cool water to shock it this often will keep it from sticking for as long as I need

Add flour to melted butter and whisk together. Whisk, letting the mixture cook for 1-2 minutes. Grease or use cooking spray to prep a casserole dish

Add heavy whipping cream and milk and whisk together until fully incorporated with flour mixture. Once incorporated add back garlic and onion. This is where I’ll add rotel tomatoes or chopped green chili If i have it lying around. I prefer to use an immersion blender at this point to make any chunks as small as possible.

Season milk mixture. Milk mixture. Wtf. Horrible name for anything. Season the cream mixture. Worse. Season the milk mixture, i use paprika, ground mustard, garlic salt, garlic powder and cracked pepper.

Whisk together. Add sriracha then Simmer and whisk until thick soup consistency

Take off heat. Add 2-3 cups of shredded cheese. Stir until melted.
Step 9
Add pasta to casserole dish, add cheese mixture and stir until fully incorporated. This is where i add leftover veggies or frozen veggies. This time i added a bag of frozen mixed veggies and a bag of frozen spinach. Add 1-2 cups of cheese to top and lightly sprinkle with breadcrumbs. Bake for 20 minutes. I usually broil on Hi for last 10. You’re looking for a nice golden brown crust. Top with fresh basil or grated Parmesan cheese
