8 ozpasta
penne, rotini, or elbows, I used egg noodles

2 cupschicken
cooked, shredded or cubed, rotisserie works great, I cooked chicken thighs, seasoned with garlic powder, onion powder, salt, pepper, paprika

2 Tbspbutter

2 Tbspall-purpose flour

2 cupsmilk

1 ½ cupsshredded sharp cheddar cheese
plus more for topping

½ tspgarlic powder

½ tsponion powder

salt

½ cupbreadcrumbs
optional topping, I used crushed saltines with garlic powder

1 Tbspolive oil
or melted butter, for breadcrumbs, I used 2 tablespoons butter

Instructions
Step 1
1. Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Step 2
Saute onions in 1 tablespoon butter, once browned, add celery and broccoli until soft.
Step 3
2. Cook pasta in salted boiling water until just al dente. Drain and set aside.
Step 4
3. In a large saucepan, melt butter, then whisk in flour to form a roux. Cook for 1 minute.
Step 5
4. Slowly whisk in milk, cooking and stirring until thickened (3–5 minutes).
Step 6
5. Stir in cheddar, Parmesan, garlic powder, onion powder, salt, and pepper. Mix until smooth.
Step 7
6. Add cooked chicken, green onion, pasta, and broccoli and sour cream into the cheese sauce. Stir to combine, then pour into prepared baking dish.
Step 8
7. Optional topping: Mix breadcrumbs with olive oil or melted butter and sprinkle over the top. Add extra cheddar if desired. I added approximately one cup of shredded cheddar, topped with breadcrumbs.
Step 9
8. Bake uncovered for 20–25 minutes, until bubbly and golden on top. Broil for 2-3 minutes until breadcrumbs and cheese topping are browned.
