Instructions
Step 1
Put 400 g of 20% fat sour cream into a pot then add 100 ml of whole milk and mix together until well combined . Now put the pan on medium low heat and keep stirring . This needs to be heated until very hot but not boiling . This will take about 10 minutes .
Step 2
After 10 minutes add 1 tsp of lemon juice to the pot and now cook for a further 5 minutes but again do not leave this boil. Optionally you can also add a pinch of salt or seasonings if you like it depends what you are using the cream cheese for . Now take this off the heat and let it sit 5 minutes .

Step 3
Use a strainer and muslin cloth to strain the liquid then the whey will start to separate . You can use the whey in smoothies or pancakes as it’s rich in probiotics . Now cover the liquid with a lid and let it cool down then put it in the fridge and once it’s cold the cream cheese is ready. The longer you leave it the firmer the cheese will be .
