Instructions

Step 1
Preheat the oven to 180°C. Grease a spring-loaded baking tin with butter and line with baking powder.
Step 2
Crush the digestive biscuits. Mix these with the butter, cinnamon and sugar. Spread over the base of the tin. Bake in the bottom shelf of the oven at 180°C for 10 minutes.
Step 3
Meanwhile, place the cream cheese in a large mixing bowl. Add sugar, eggs and vanilla pod seeds to the bowl. Add grated lemon zest and juice from the lemon to the mixing bowl. Whisk till smooth using an electric mixer.
Step 4
Remove the biscuit base when done and reduce the oven temperature to 120°C.
Step 5
Add the filling over the biscuit base, leaving at least a centimeter of space to the top of the base to allow the cheesecake to gently rise.
Step 6
Bake the cheesecake for 55 minutes at 120°C in the bottom try of the oven.
Step 7
For the third stage of this recipe, mix the sour cream, sugar and vanilla pods in a bowl and combine using a hand whisk till stiff.
Step 8
Gently poor this over the cheesecake as an even layer when it comes out of the oven.
Step 9
Refrigerate the cheesecake for at least 6 hours to allow it to set.
