This was a last minute throw together as I hadn't manged to go shopping. It might have been experimental and it was very 'untidy' but it was delicious. This is my best guess what I did. Will fill out the recipe detail next time I make it. I think it could be made without bacon for a veggie version

Step 1
Preheat oven to fan 180
Step 2
Throw the squash, leek, pepper, onion, bacon & chips in a roasting tin. Season with salt pepper a rosemary, drizzle with a little oil and toss it all together.
Step 3
Roast for about 50 mins until veg is tender and slightly caramelized
Step 4
Remove from the oven and crumble over the stilton. Return to the oven for a few more minutes until the cheese starts to melt. Serve immediately.
