Chicken & Dumplings Chefchosen’s Way

This recipe is really easy to make ! All in one pot! Prep all veggies ahead & everything will be very noicee & smooth! You’re more welcome to make your dumplings from scratch 😇

Ingredients
4 servings
2 sliceslow sodium bacon
2chicken thighs
bone in
1whole carrot
small diced
1celery stick
small diced
1whole onion
small, diced
3 glovesgarlic
minced
¼ tspred pepper flakes
2 Tbspunsalted butter
chicken stock
2bay leaves
3 sprigsfresh thyme
salt
to taste
pepper
to taste
Cayenne pepper
to taste
Chicken bouillon powder
0.5green onion
thinly sliced
parsley
roughly chopped
For the dumplings

Instructions
Step 1
In a large pot over medium heat; Add the bacon & cook until crispy & remove
Step 2
Pat the chicken thighs dry & season with salt & pepper. Before adding to the pot to sear on both sides for 3-5 min ( each side)
Step 3
Remove the chicken thighs & lower heat to medium low; Add the carrots & onions. Sauté for few minutes, before adding the celery & garlic. ( season with salt & pepper TT)

add the butter & and red chili pepper flakes; sauté until fragrant then add the chicken stock, bay leaves and thyme.

Step 5
Add the chicken thighs back in the pot; turn heat to low & allow to simmer for 25-35 minutes. Chicken should be cooked through and easily falling off the bone.
Step 6
Remove the bay leaves, thyme as well as the chicken. pull chicken apart with a fork then set aside. In a bowl mix the ingredients for the flour slurry . Add the flour slurry to the pot it should help it thicken up. If it’s too thick add more water or chicken stock. If it’s too loose add more flour slurry. ( be careful it takes times for it to thicken up !)
Step 7
Once thicken add the dumplings & chicken; season with the listed spices. Add the green onions and parsley. Allow to simmer until the dumplings are fully cooked. Served hot and enjoy!
