Instructions
Step 1
1-Preheat oven to 375˚F. Butter a 9-inch springform pan and line the bottom with parchment paper.
Step 2
2-In a large mixing bowl, beat together eggs with sugar on high speed for 4-5 minutes or until light in color and thick.
Step 3
3- Add yogurt, oil, lemon juice and lemon zest and beat on low speed until well combined.
Step 4
4-Sift flour and baking powder, mix well.
Step 5
5- Pour half of the batter into prepared pan. Top with f diced strawberries. Spread remaining batter over the top. Cover the surface with halved strawberries (cut-side-down)
Step 6
6- Bake at 375˚F for 45-55 minutes, or until a toothpick inserted into center comes out clean
Step 7
7- Let cake rest in pan 15-20 min then remove ring. Cool until just warm or at room temperature. To serve, dust with powdered sugar if desired
