Instructions

Step 1
In a soup pot, add onion, dried mushrooms, garlic, water. Bring to a boil then simmer for 20 min.
Step 2
Add parsley, rice, and fresh mushrooms and simmer for 25 min (or until rice is done). Stirring throughout so rice doesn’t burn
Step 3
Season with salt and pepper to taste
Step 4
Drizzle with olive & sprinkle with cheese
