Instructions

Step 1
In small saucepan, bring chicken stock to a simmer. In a separate lg saucepan, heat butter and olive oil over med heat. Add onion and sweat 2-3 min. Add rice and stir to coat.
Step 2
Add wine and stir, constantly scraping bottom, until absorbed.
Step 3
Add ⅓ stock and stir constantly until absorbed. Repeat until all stock is fully absorbed and rice is al dente, 18-20 min.
Step 4
Off heat, stir in butter and parmesan. Season with salt and white pepper.
