Instructions
Step 1
Preheat oven to 375ºF. Place nuts in 8" by 8" metal baking pan. Bake 8 to 10 minutes, until lightly toasted. Cool completely. In food processor, with knife blade attached, process pecans until finely ground.
Step 2
In bowl, with spoon, mix butter with honey, pepper, and ground pecans, until blended. Spoon mixture into a 6-inch long strip across width of sheet of plastic wrap or waxed paper, back and forth, to make a 6-inch-long log. Wrap well; refrigerate up to 2 days or freeze up to 2 months (thaw in refrigerator 1 hour before using).
Step 3
In 12-inch skillet, heat 1/2 inch water and green beans to boiling over high heat. Reduce heat; simmer 5 to 10 minutes, until beans are just tender-crisp. Drain; rinse with cold running water to stop cooking. Transfer beans to zip-tight plastic bag and refrigerate up to 2 days if not serving right away.
Step 4
To serve, in 12-inch skillet, heat cooked beans with one-fourth of pecan butter over medium heat until butter melts and beans are hot.
