Instructions

Step 1
Empty fresh cranberries into a saucepan and transfer 1/2 cup to a small bowl.
Step 2
Add sugar and water to the saucepan and cover over low heat. Stir mixture occasionally over 10 minutes until cranberries become soft and sugar is completely dissolved.
Step 3
Increase to medium heat until cranberries begin to burst, about 12 minutes. Then remove the orange zest.
Step 4
Reduce the heat to low and stir in reserved cranberries. Add additional sugar, salt, and pepper to taste and cool to room temperature or refrigerate overnight before serving.
