Sisig Pasta

Instructions

Step 1
Cut the garlic, shallots, ginger, and scallions, and set aside.
Step 2
Cut the pork belly into small to medium dice, then fry in a pan with no oil. Enough fat will be rendered out during the cooking processes. Fry the pork belly until it is browned. Occasionally stir the pork to make sure all sides are browned. Turn off the heat, and using a paper towel, remove the excess oil from the pan by absorbing it.
Step 3
Turn the pan back on, and add the garlic, shallots, and ginger. Sautee until it is fragrant. Should take about a minute or so. Then add the sriracha, Maggi seasoning, and calamansi juice. Sautee for a minute while scraping the bottom of the pan to pick up any fond. Set aside.
Step 4
Put water in a pot and boil. Once it comes to a boil, add a pinch of salt and the pasta. Cook until the pasta is al dente. Drain the pasta.
Step 5
Add the drained pasta to the sisig, and add the scallions. Add the salt and pepper to taste, and mix well. Serve warm.
