White blend: Cauliflower base blend

From Missy Chase Lapine's "Sneaky Blends" cookbook. This will be helpful for other recipes from her book, which will be added to this Sneaky Veggie community. "This is the lightest of all my blend; yet since it's a cruciferous vegetable, it has incredible health benefits. Blending also makes it easier for your body to absorb cauliflower's beneficial phytonutrients. Win-win! Note: you can totally swap in frozen cauliflower florets here, if you'd like. Just run them under hot water to thaw them a little before putting them in your blender."

Instructions

Step 1
Place a steamer basket into a large pot, pour in a few inches of tap water (make sure the water is below the bottom of the basket), and set it over high heat.
Step 2
Add cauliflower and steam, covered, for 9 to 11 minutes, until fork-tender.
Step 3
Remove from heat and puree the cooked cauliflower with 1/4 cup of filtered water until smooth, adding more water as necessary.
