For the potatoes:
1.5 poundsbaby red potatoes
cut into thirds
2 tablespoonsolive oil
divided
1 tablespoondried rosemary
or fresh
1 teaspoondried dill
1 teaspoondried oregano
½ teaspoonsalt
½ teaspoonpepper
2onions
sliced into wedges, I used one red and one yellow
For the whipped feta:
4 ouncesfeta cheese
¾ cupgreek yogurt
0.5juice of lemon
0.5zest of lemon
1clove garlic
minced
½ teaspoonsalt
¼ teaspoonpepper

Instructions
Step 1
Preheat the oven to 425.
Step 2
Add the potatoes to a pan with cold water. Add a generous pinch of salt and bring the water to a boil, then boil for 10 minutes. Drain the water and discard.
Step 3
While the potatoes are boiling, add a sheet pan to the oven to allow it to heat up. When the potatoes are ready, remove the pan from the oven, drizzle a tablespoon of olive oil over the bottom, then add the potatoes along with the onions, the second tablespoon of olive oil, rosemary, salt, oregano, dill and pepper. Toss to combine. Bake for 40-45 minutes, tossing a couple times while cooking.
Step 4
While the potatoes are cooking, make the whipped feta. Add the yogurt, feta, olive oil, salt, lemon juice, lemon zest, garlic and pepper to a food processor and process until smooth.
Step 5
Place the dip in a shallow bowl, add the roasted potatoes and onions to the top. Garnish with crushed walnuts, chopped scallions and honey.
