Step 1
In a large wide pot add the ube, sugar, butter, coconut milk, condensed milk, salt and vanilla extract.
Step 2
Cook on medium low heat while constantly stirring. Make sure you scrape the sides and bottom so it does not burn.
Step 3
Once the jam starts to boil, you can add the ube extract if you like. This is optional, as I only added it for color. Food coloring works as well.
Step 4
When the halaya is boiling, keep a close watch on it and stop cooking when it reaches your desired consistency. This took me 20 minutes, but can vary person to person.
Step 5
Put the jam in your desired container and let cool completely before covering it.
Step 6
This can stay fresh in the refrigerator for up to 2-3 weeks. It can also be frozen.
