Ingredients
6 servings
6shallots
with one end of each cut
2 tablespoonsolive oil
½ cupunsalted butter
softened
½ cupParmesan
grated, plus more for sprinkling
3 tablespoonsbasil
minced
1 tablespoonparsley
minced
1 tablespoonchile paste
calabrian
salt
to taste
pepper
to taste
1sour dough baguette
split in half and each half cut crosswise
Instructions
Step 1
1. Preheat oven to 375˚F.
Step 2
2. Place shallot on a sheet of foil, drizzle with oil and season with salt and pepper.
Step 3
3. Roast shallots for 1 hour. Remove from oven and cool for 15 minutes.
Step 4
4. Squeeze roasted shallots into a bowl and mash together until a smooth paste forms.
Step 5
5. Add remaining ingredients and season with salt and pepper. Mash together until smooth.
Step 6
6. Spread butter mixture evenly over each piece of baguette and top with more grated Parmesan.
Step 7
7. Transfer bread to a baking sheet and bake for 15 to 20 minutes or until toasted and bubbling on top.
Step 8
8. Slice and serve.
