If you’re looking to rid red onions of some of their sharpness, soak them in ice water to make them less pungent and even crispier. When cooked, red onions are great for grilling or roasting as their inside turns jammy, rather than mushy like other onions. Another way to use red onions—pickling! Red onions are often the onion of choice when it comes to pickling. Pickled onions are easy to make and are a fantastic addition to tacos or ceviche. Onions are a great source of antioxidants, particularly red onions. Red onions get their deep red color from an antioxidant called anthocyanins. Like other onions, red onions are best stored in a cool, dark, and dry place like a pantry or cabinet. Here they’ll last up to at least a month. Although they can be kept in the fridge, they may become soft and soggy. However, once cut, red onions should be stored in an airtight container in the fridge for 7-10 days.
