One Pot Veggie Parm Pasta

I have no clue what to call this dish other than delicious 😋 It’s a one pot recipe, quick to make, and on the healthier side! I mean, look at all that color 😍

Instructions

Step 1
In a skillet over medium high heat, begin heating your oil
Step 2
While your oil heats up, chop your sausage and onion then add it to the skillet. Sauté this until your onion is translucent and your sausage has some brown to each side
Step 3
While your sausage and onion cooks, prep your veggies by cutting your asparagus, pepper, tomatoes, and zucchini to bite size pieces. Set aside. By this point your sausage and onion should be done cooking
Step 4
To your skillet, add your pasta and water. Make sure your pasta is mostly covered by the water.
Step 5
Bring to a simmer then turn the heat to medium low
Step 6
Cover your skillet and let this cook for 7 minutes. Stir half way through.
Step 7
While your pasta cooks, in a small mixing bowl you will add your butter, minced garlic, Italian seasoning and lemon juice. Microwave this in 10 second intervals until the butter is melted. Mix until well combined
Step 8
By this point your pasta should be just about done cooking. There may be some liquid still but that’s okay. Give this a good mix, then add your veggies, butter mixture and 1 cup of parmesan cheese. Mix this, cover, and cook for 3 more minutes
Step 9
Once that is done cooking, mix it again and top with the remaining parmesan cheese
Step 10
There may still be a little liquid remaining so let this set for about 5 minutes before serving
