I made the pancakes but not the sauce, I doubled the recipe and was eating the leftovers for a week ๐ I added garlic powder and Cajun spice to the batter to increase flavour. I substituted plain flour for almond flour and did not have much success in the batter. Ended up having to make additional batter with plain flour to get a pancake batter that coated all the vegetables. Saying that I was adding rough estimates on the amount of vegetable ribbons I put in there ๐
I would make this again. Easy, healthy and tasty
