I loved this.. but after I made some adjustments. I thought it was very bland and needed a lot more salt. Also I didn't get a full up of coconut water so I used the whole can cream and all. And it came out soooo good. I would recommend doing that if you want the coconut taste to balance out. It was also pretty acidic from the tomatoes so I some sugar to balance it out. I served with a side of asparagus that eventually just found its way mixed in and it tasted great. It's a beautiful base dish that can stem so many ways with some adjustments. We kept the dish Vegan and we were pleasantly surprised to find this dish didn't need meat or cheese.
