Classic Shrimp Salad

We used plain Greek yogurt instead of mayo. Chopped the shrimp. We had some chopped red and yellow peppers, so I threw them in.

Well, I used this recipe as inspiration, but what I made ended up pretty different! I used 1 1/2 bunches of celery, a few tomatoes, 2 green onions, some minced kalamata olives, a red bell pepper, dried dill and fresh cilantro (I didn't have any parsley). The fresh lemon zest and juice are key. Can't taste the mustard but it may be an important underlying flavor element. I still used 1 tsp mustard but had double the shrimp & vegies. It ended up tasting a lot like the crab & pea salad I love at a nearby fancy restaurant.

Easy peasy!!! Refreshing on a hot day for lunch or dinner, as a salad or sandwich or romaine lettuce wraps! Will make again, I did add some spice!
