Step 1
If there is any fat on the brisket, remove it. After seasoning the brisket with salt and pepper, use a cast iron skillet to sear the brisket on all sides. It will require five to seven minutes. Transfer to a plate. Then add some more oil and chopped onions, sauté them for five minutes. Next, add the garlic and continue to sauté for 30 seconds.
Step 2
Add the Guinness, beef broth, onions, garlic, 1 can of Hot Rotel, brown sugar, Dijon mustard, thyme, and bay leaf to the Instant Pot and stir to incorporate. Spoon some liquid over the brisket after submerging it in the liquid. Put a lid on it, set the valve to sealing, and cook for sixty minutes at high pressure. After finishing, allow for a natural release.
Step 3
Using the SAUTE button, bring the leftover broth to a boil in the Instant Pot, then add in the melted butter and flour mixture and simmer until thickened. It should take about sixty seconds.
Step 4
Slice the brisket and serve with the gravy.
