Spinach & Artichoke Chicken Skillet Casserole

Ingredients
6 servings
3chicken breasts
large, cooked and cut into 1-inch pieces
8 ouncesspinach
fresh or thawed from frozen
1 x 6.5 ounceartichoke hearts
drained and diced
8 ozcream cheese
softened
¼ cupsour cream
or greek yogurt
¼ cupmilk
â…“ cupparmesan cheese
shredded, or grated
1 ½ cupsshredded mozzarella cheese
½ teaspoongarlic powder
1 Tbspoil
salt
to taste
black pepper
to taste
Instructions
Step 1
Preheat oven to 400 degrees
Step 2
In a large bowl mix together cream cheese, sour cream, parmesan cheese, 1 cup of the mozzarella, milk, garlic powder, salt & pepper. Set aside
Step 3
Heat oil to medium heat in a large oven-safe cast iron skillet*
Step 4
Add spinach and artichokes, season with salt & pepper, and cook for 3-4 minutes
Step 5
Add cheese mixture to skillet and combine everything well. Let cheese melt and heat through for 2-3 minutes
Step 6
Lastly mix in the chicken, making sure every piece coated
Step 7
Top with remaining mozzarella cheese
Step 8
Bake for 15 minutes
